1 stick unsalted butter


1 egg, lightly beaten


2 tablespoons cold water


1 pinch salt


1 2/3 cups plain all-purpose flour, sifted


Caramel Apple Filling:


1/2 stick unsalted butter


3/4 cup sugar


10 apples (recommended: Granny Smiths or Reine de reinette)


2 tablespoons sugar, for sprinkling





Preheat oven to 400 degrees F.


To make the pastry, let the butter soften to room temperature and put it into a mixer on low speed. Pulse for 2 seconds before adding the egg followed by the water. Mix for a few seconds and then add the salt and the flour, keeping 2 tablespoons aside to add later in case the dough is too sticky. Work fast because the gluten in the flour makes the dough go elastic.


Stop the mixer before the dough turns into a ball. Flatten the pastry and shape a circle about 6 inches wide. Place the pastry on a plate, wrap it in plastic wrap and leave in the refrigerator for 1 hour minimum to 24 hours. This lets the gluten relax and when you roll out the pastry it stays flat.


Caramel Apple Filling: Cut the butter into little bits and scatter on a 10-inch baking dish. Shake the sugar over it and add 2 tablespoons of water to keep it from crystallizing. Caramelize the sugar by placing the dish on a medium heat. Meanwhile, peel the apples, cut in 2 and remove the core. Cut them into 4 big pieces. Once the butter and sugar have caramelized take the pan off the heat. Place the pieces of apple vertically on top of the caramel in the baking tin, taking care to fill the gaps with more pieces so they stick together in a solid mass. Sprinkle 2 tablespoons of sugar over the apples. Put the dish back on a heat diffuser for 15 minutes at a medium heat until the caramel starts bubbling up through the apples.


Preheat the oven to 400 degrees F. Roll the pastry out and place over the apples folding it in at the edges. Make 3 or 4 holes with a knife and 1 in the middle to let steam out when baking. Bake for 20 minutes and then let it rest for 15 minutes. It is important that you do this otherwise the apples will fall apart when you turn it over. Take a dinner plate and put it over the baking tin. Turn it over. Slowly remove the baking tin.


Serve lukewarm with vanilla ice cream, heavy cream or whipped cream.

5 oz. sugar


2 lb. firm, but ripe pears, such as William


1/4 tsp. ground cinnamon or cloves; optional


3 tbsp. plus 1 tsp. butter


8 oz. frozen puff pastry, defrosted

Preheat oven to 450 degrees. To make the caramel: mix together 4 ounces of the sugar and 6 tablespoons of water. In a heavy bottomed saucepan, cook gently until the mixture turns a rich brown; do not allow to burn.





Pour the caramel immediately into a lightly buttered round baking dish 8 inches in diameter.





Quarter the pears and remove the core and skin. (If you are using a shallow dish, decrease the amount of fruit.) If the pears are very large, cut in half lengthwise again. Sprinkle with the remaining sugar, and the spice, if desired.





Arrange the slices upside down on the caramel, which will have set. (As you plan the arrangement of pears, remember that the tart will be turned upside down.) Dot butter evenly oven the top. Roll out the pastry and cut in a circle 1 1/4 inches longer than the diameter of the dish.





Lay the pastry over the fruit and turn the edges in so that the pastry fits neatly inside the rim of the baking dish. Make 4-5 slits in the center of the pastry to allow steam to escape while baking. Bake in preheated oven 15-20 minutes; reduce heat to 350 degrees and bake for another 15-20 minutes or until pastry is cooked. Cool 10-15 minutes then invert onto a large plate with room, and serve with whipped cream. Serves 6.I search a recipe for tarte tatin?

6 golden delicious or royal gala apples


2 tbs lemon juice


200g vanilla sugar


30g unsalted butter, cubed


250g puff pastry*


Thick cream or ice-cream, to serve


Method


Peel and core the apples and cut into quarters. Place in a large bowl and toss in the lemon juice and 100g vanilla sugar.


Place remaining sugar and 2 tablespoons water in an oven-proof frying pan or 25cm tarte Tatin pan over low heat, stirring to dissolve the sugar. Increase heat to medium and cook for about 5 minutes until the sugar caramelises and is a light-golden brown. Add the apple, cut-side up and dot with the butter. Keeping the heat very low, cook for a further 5-6 minutes to partially cook the apple. Remove from heat and set aside to cool.


Preheat the oven to 190掳C.


Roll out pastry and cut into a circle slightly larger than the pan. Place the pastry over the apple, tucking any excess underneath. Place the pan on a baking tray to catch any juices that may bubble over and bake in the oven for 35 minutes until the pastry is cooked and golden. Remove from oven and allow to rest in the pan for 10 minutes. Carefully turn the tart upside down onto a large plate. Serve with cream or ice-cream.

* Try purchasing puff pastry from a French patisserie. It will be made with butter and will improve the quality of your dish.

Recipe for a tarte tatin..?

I have found a recipe for a pear tarte tatin that looks good, but I have one problem. After it is baked, you have to empty it on a dish by turning the baking pan upside down. That sounds risky. I don鈥檛 know if it鈥檒l work. The recipe does not define weather you must allow the tarte to cool before you empty it, or if you must place the pan in cold water to cool it, or something else. Can anyone give me a tip?Recipe for a tarte tatin..?
I would let it cool a little bit as you don't want to burn yourself. Once room temp you can flip it out using another plate or platter. Run a knife around the edge to loosen, place a plate on the top and press firmly, then flip it over. If it is not budging, put it back in the oven for 2 - 3 mins to melt the sugar and then try again.

Well, I'd have used either a springform pan or a tart pan w/ a removable bottom..... since you didn't do either, why not just serve it from the bakign dish tis in? Dust teh whole thing w/ xxx sugar to decorate it.
1 frozen puff pastry sheet (from a 17 1/4-oz package), thawed


1/2 stick (1/4 cup) unsalted butter, softened


1/2 cup sugar


7 to 9 Gala apples (3 to 4 lb), peeled, quartered lengthwise, and cored





Special equipment: a well-seasoned 10-inch cast-iron skillet Preheat oven to 425掳F.





Roll pastry sheet into a 101/2-inch square on a floured work surface with a floured rolling pin. Brush off excess flour and cut out a 10-inch round with a sharp knife, using a plate as a guide. Transfer round to a baking sheet and chill.





Spread butter thickly on bottom and side of skillet and pour sugar evenly over bottom. Arrange as many apples as will fit vertically on sugar, packing them tightly in concentric circles . Apples will stick up above rim of skillet.





Cook apples over moderately high heat, undisturbed, until juices are deep golden and bubbling, 18 to 25 minutes. (Don't worry if juices color unevenly.)





Put skillet in middle of oven over a piece of foil to catch any drips. Bake 20 minutes (apples will settle slightly), then remove from oven and lay pastry round over apples.





Bake tart until pastry is browned, 20 to 25 minutes. Transfer skillet to a rack and cool at least 10 minutes.





Just before serving, invert a platter with lip over skillet and, using potholders to hold skillet and plate tightly together, invert tart onto platter. Replace any apples that stick to skillet. (Don't worry if there are black spots; they won't affect the flavor of the tart.) Brush any excess caramel from skillet over apples. Serve immediately.





Cooks' note:





鈥art can cool in skillet up to 30 minutes. It can also stand, uncovered, up to 5 hours, then be heated over moderately low heat 1 to 2 minutes to loosen caramel. Shake skillet gently to loosen tart before inverting.鈥?br>

    okay, i'm doing a french project for school. i have to make a french dessert (i chose the tarte aux pommes, apple tart).





    the recipe i found says to use 75g of butter and 150g of flour. can anyone tell me what those are in american measurements?

    It's most often connected to Normandie (Tarte de Pommes a la Normande). Apple pies of different kinds has been popular in many areas and it's hard to say anything about origin and so on.





    Tarte Tatin, that's an upside down apple tart, is French and does have a history. St茅phanie Tatin made it by mistake when cooking at her and her sisters hotel. She was planning on making a traditional apple pie but left the apples cooking for long in the sugar. To save the dish she put the pastry on top instead. It was a success among the customers and it spread through the Sologne region.

    It's OK- Honestly it's just as good as drugstore eyeliner and I wouldn't waste my money on this. But if you really are set to get this buy it somewhere that will allow you to return it used ( like Sephora )

    I'm not sure how their bronzing mositurizer works but I know that Wet and wild makes one that is pretty darn good and you can purchase it at a local drugstore.





    I use Becca but its 38.00 I use these when i don't feel like spending that pretty penny.

    Tarte cheekstain?

    Is this stuff like ink? Or sticky?


    I've been tempted to try it, but it seems so.... odd. Is it better than powder blush?Tarte cheekstain?
    I really like it. is it kind of tacky at first, but if you put a little face powder over it you will be fine. but you need to put it on sparingly and just keep layering until you get the depth of color you want.





    and yeah, use a makeup sponge or you will end up with pink or red fingers!!!


    Smashbox also makes a good cheek stain and may be cheaper, i'm not sureTarte cheekstain?
    It's like roll on fragrance. don't buy it if you don't know what your doing though, my sis uses it and i tried it ones and my hands were red, I stained 3 of her makeup sponges and i was extremely red.

    Its not so much a recipe you need for this, but the following,





    1) Apples suitable for cooking.


    2) Sugar


    3) splash of water


    4) Good cast iron frying pan


    5)Puf Pastry


    6)egg yolks and little milk.





    Make a light caramel in the bottom of your pan. place peeled and cored quarters of apples in a decorative manner in the light caramel and then cook for a further minute. Place a round of puff pastry on the top of the apples, right up and around the inside edge of the pan. mix egg yolks with little milk and salt, then eggwash the pastry and bake until golden in a hot oven.





    Remove and be VERY careful at the next point - its hot and the caramel will burn your skin if you get it on you.. Place a plate upside down on top of the pan. With one hand on the plate, and the other on the pan (using oven gloves or a cloth of course), turn upside down in a smooth but quick action.





    Note - if your pan isnt completely non stick you could be in for some problems, Experiment with the cooking stage of the sugar as you want a nice deep amber colour in the finished product.

    For those of you who have worn Tarte Cheek Stain, how well it does it stay on? I'm going on a cruise in a week so I'm wondering if the stain will sustain the sun and water or if there's a better product out there! I don't want to buy it and then poof its gone from my face!

    In all honesty it doesn't last all that well. You have to reapply it at least once. and in the water just forget it.





    This is the best cheek stain to me because its fool proof.

    Tarte stain blush? anyone ever tried this?

    i got this several weeks ago and love the tint... but was wondering what you gals do to the plastic thingie on top that covers the stain? do you toss it or do you take it off and then stick it back on everytime you use it- it just seems to be sooo messy all the time.Tarte stain blush? anyone ever tried this?

    I have never heard of Tarte's little blot book but I have found blot papers at Garden botanika and Body Shop. I always use them on my nose and they work great whether I have makeup on or not. They aren't in a book, just loose in a little envelope, but I think I would like a book better. Good luck!

    I've used this and other Tarte eye shadows they are really nice. I found that they are super pigmented, soft and easy to blend. They do last as long a MAC's- just make sure you use a good eye shadow primer.

    Hi! What do you guys think of Tarte Cheek Stain?





    I just bought it and i love the way it looks on, but it does feel sort of heavy (even after it ';dries off';). I know it's ';oil-free,'; but oil is not the only thing that can clog pores. (FYI, I'm 24 with mildly greasy skin but little to no acne.)

    if you add that to baking soda,


    then you get baking powder. Baking soda stops your food from rising after a certain degree, but cream of tartar takes it even further.





    Also, if you are beating egg white. For one egg white, i'd add around 1/6th teaspoon of cream of tartar, and that usually always allows me to beat the egg whites until stiff peaks.

    I have drier skin and I found that as long as I was hydrated it was okay. It didn't feel greasy or oily at all. Also the shimmer was fine, dewy is what I'd call the look.

    OMG YES!!!!! you must get it! it does not clog pores no greasy or oily feeling at all lasts all day no shimmer unless you get the color w. shimmer in it i would def. recommend it! its def. worth it! i got it for my friend one year for her birthday and she fell in love with it and it looks great on her!
    I have it i love it! It gives you this really pretty natural glow. And its worth the price because it lasts forever. Its def. a must have, and its not oily or greasy at all.
