quetsche = damson, or damask plum.
Tarte aux quetsches is a kind of alsacian plum pudding or plum pie.

';Tarte aux quetsches'; means to be ';quetsch plum tart';. It's an alsacian fruit and it's like a plum, but a little bigger.
';Omelette soufflee au kirsch'; means to be ';puffed omelette with kirsch';. Kirsch is a cherry alcohol.
I think that's a plum pie (or you may call it a tart...I'd call it a pie. Bottom crust, no top crust) and a souflée with kirsch (cherry alcohol).
The second one is some sort of Souflée probably with kirsch (cherry) liquor. Kirsch is German for cherry but the name of the dish is in French.
Did you mean tarte aux quiche for the first one? I don't know what ';quetshces'; is but tarte is typically an uncovered pie.
